I’m Kate, and I’m a wannabe herbivore. By that I mean that I want to follow a plant-based diet. My goal at this point in time is to eat 80%-90% plant-based.
My reasons for this are mostly health based. I have found in the past that eating mostly plant-based whole foods has lead to me feeling great both physically and mentally. Recently, I have found myself struggling a bit generally, and so I want to try to get my health back on track.
The biggest problem for me is support. I am so easily swayed by others’ choices, and I really love food! This blog is to help me stay accountable for what I am choosing to eat, and to motivate me to stay on track.
